  • 2 red onions
  • 12 quality sausages (can be veggie!)
  • Olive oil
  • 2 tsp runny honey
  • 8 large wholemeal tortillas
  • Red cabbage slaw, to serve
  • Soak 8 wooden skewers in water to prevent them from burning. When ready, peel the onions and cut into sixths, then break into petals. Line up six sausages and six onion petals, then push four skewers through all of them at once, evenly spaced, to allow you to pick them all up together. Repeat with the remaining sausages and onion pieces.
  • Rub the whole lot with olive oil, and then grill on a glowing barbecue until nicely charred and caramelised. Remove from the skewers, chop into large chunks, and stuff into tortilla wraps with a good dollop of slaw or whatever sauces and sides you fancy.
