Beef Mince Tagine



  • 1 sliced onion
  • 45ml olive oil
  • 1 tsp sugar
  • 4 tomatoes, seeded, peeled and chopped
  • ½ tsp each of salt, pepper and cumin
  • 125ml veg stock
  • For the Beef
  • 225g beef mince
  • Chopped coriander
  • ½ tsp each of cinnamon and cumin
  • ¼ tsp black pepper
  • Mix the meat with salt, pepper, cinnamon, cumin and a handful of chopped coriander and shape into small meatballs. Set aside.
  • Heat the oil in a large pan and fry the onions with the sugar, until golden brown. Add the tomatoes, stock and seasoning and cook for 15 mins more. Add the meatballs and cook for 10 mins, turning the meatballs regular to cook through. Simmer with the lid on for 5 more minutes, seasoning to taste as you go. Serve with couscous.
