Beef Tikka Meatball Curry

  • 450g beef mince
  • 1 grated onion
  • 2.5cm piece of ginger, grated
  • 2 chopped garlic cloves
  • 1 tbsp ground coriander
  • ½ tsp ground cumin
  • 1 tsp cayenne pepper
  • Chopped coriander
  • For the Sauce
  • 1 tbsp oil
  • 2 chopped onions
  • 2 tbsp tikka masala paste
  • 6 chopped tomatoes
  • 300ml veg stock
  • Mix the beef, ginger, garlic, onion, spices and chopped coriander in a bowl, and combine thoroughly before forming into about 30 balls. Chill for 30 mins in the fridge while you prepare the sauce.
  • Heat the oil in a large pan and fry the onions for 7 mins, or until softened and golden. Add the curry paste, fry for a minute, then stir in the stock and tomatoes. Simmer until nicely thickened. Stir the meatballs into the sauce and simmer for 25 mins, turning occasionally, until cooked through. Scatter with chopped coriander, and serve with a few naans. Nice!
