Black Bean Burrito Bowl



  • 125g basmati rice, cooked
  • 1 tbsp olive oil
  • 2 chopped garlic cloves
  • 400g tin of black beans, drained
  • 1 tbsp cider vinegar
  • 1 tsp runny honey
  • 1 tbsp chipotle paste
  • 100g chopped kale
  • 1 avocado, sliced
  • 1 tomato, chopped
  • 1 red onion, chopped
  • Fry the garlic for 2 mins in the oil, then add the vinegar, honey, beans, and chipotle. Season and warm through for a couple of mins.
  • Meanwhile, boil the kale for 2 mins, then drain and squeeze out any excess moisture. Divide the cooked rice between two bowls, and top with the kale, avocado, beans, onion, and tomato. Serve with your favourite hot sauce and some coriander, if you fancy.
