Blackened White Fish with Mango

Method

  • 2 crushed garlic cloves
  • 1 tbsp olive oil
  • 2 tsp Cajun spice blend
  • ½ tsp dried oregano
  • ½ lime, grated zest and juice
  • 4 x 150g white fish fillets
  • 2 little gem lettuces, split into leaves
  • For the Mango Salsa
  • 1 chopped mango
  • 4 sliced spring onions
  • Handful of coriander leaves
  • ½ lime, zest and juice
  • Mix the oil with the garlic, spice blend, oregano and lime juice and zest. Score the skin of the fish fillets, and rub with the oil and spice paste until well-coated. Heat up a griddle pan and cook the fillets skin-side down for 3 mins until charred, then turn over and cook for 2 mins on the other side.
  • Meanwhile, mix the ingredients for the salsa together. Serve the fish fillets with the lettuce leaves, salsa and extra lime wedges for squeezing.
