Bolognese and Baby Potato Hash

Ingredients

  • 500g baby potatoes, diced to 1cm pieces
  • 2 tbsp olive oil
  • 2 finely chopped carrots
  • 1 finely chopped onion
  • 2 finely chopped parsnips
  • 2 crushed garlic cloves
  • 500g minced beef
  • 3 tbsp tomato puree
  • 15g basil leaves
  • Boil the potatoes in salted water for 10 mins, then drain and set aside. Meanwhile, fry the onion, carrots, garlic and parsnips in the oil with some seasoning for 10 mins to soften, then tip in the drained potatoes and fry for 5 mins until everything is golden and just crisp. Remove and set aside.
  • Add the meat to the pan and break up with a spoon. Cook for 5 mins, stir in the tomato puree and cook until the meat is browned. Add the veggies back to the pan and cook for 5 mins, then stir through the basil and season to taste. Serve with some grated parmesan or cheddar.
