Braised Beef Chilli



  • Olive oil
  • 2 sliced red onions
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tbsp ground coriander
  • 1.5kg diced beef shin
  • 3 green capsicums, sliced
  • 2 ancho chillies, soaked and chopped
  • 1 tbsp tomato puree
  • 500ml beef stock
  • 400g tin of chopped tomatoes
  • 30g very dark chocolate, broken
  • Coriander, chopped
  • Preheat the oven to 150C. Heat a glug of oil in a lidded casserole, and fry the onions for 5 mins before adding the spices and frying for 3 mins more. Add the beef, fry for 8 mins to brown all over, then add the capsicums for a further 5 minutes.
  • Stir in the tomato puree, ancho chillies, stock and tomatoes. Bring to the boil, cover with the lid and cook in the oven for 3 hours. Once ready, stir in the chocolate pieces and chopped coriander, then serve with rice.
