  • 100g can of butterbeans, drained
  • 1 tbsp wholegrain mustard
  • 3 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper
  • 2 slices of french bread, toasted to serve
  • Place the beans, mustard, olive oil, and lemon juice into a food processor, and blend until creamy and smooth. Season to taste with salt and pepper, and serve thickly spread on toasted baguette.
