Ingredients
Method
- 1 tbsp olive oil
- 75g flour
- 1 tbsp paprika
- 200g natural yoghurt
- 270g cauliflower florets
- 30ml hot sauce, or to your taste
- 2 tsp honey
- 1 lime, zest and juice
- 150g salad leaves
- 250g cooked lentils
- Preheat the oven to 220C. Whisk together the flour, paprika, yoghurt and 50ml of water with a big pinch of salt to make a smooth batter, then toss in the cauliflower to coat, before placing on an oiled and lined baking sheet. Bake for 25 mins, tossing half way, until crisp and golden, then toss in a mixture of the hot sauce and 1 tsp honey before baking for 8 mins more.
- Meanwhile, whisk together the lime zest and juice with the remaining honey and 1 tbsp of olive oil in a bowl, then toss in the lentils and salad leaves. Divide between plates, and top with the cauliflower wings. Enjoy.
