  • 2 tbsp milk
  • 1 tbsp olive oil
  • 60g blue cheese
  • 1 peach, cut into wedges
  • 2 handfuls of rocket
  • 1 tbsp chopped chives
  • 1 tbsp olive oil
  • Salt and pepper
  • Black olives, to serve
  • Chopped parma ham, to serve
  • To make the dressing, stick the ingredients in a food processor, and blitz until smooth. Heat up a griddle pan until smoking, and chargrill the peach wedges for a few minutes on each side, or until nicely charred and soft.
  • Mix all of the other ingredients in a bowl, then pile on a plate with the charred peach wedges on top. Drizzle with the dressing, scatter with olives and ham pieces, and enjoy.
