Ingredients
Method
- 2 tbsp milk
- 1 tbsp olive oil
- 60g blue cheese
- 1 peach, cut into wedges
- 2 handfuls of rocket
- 1 tbsp chopped chives
- 1 tbsp olive oil
- Salt and pepper
- Black olives, to serve
- Chopped parma ham, to serve
- To make the dressing, stick the ingredients in a food processor, and blitz until smooth. Heat up a griddle pan until smoking, and chargrill the peach wedges for a few minutes on each side, or until nicely charred and soft.
- Mix all of the other ingredients in a bowl, then pile on a plate with the charred peach wedges on top. Drizzle with the dressing, scatter with olives and ham pieces, and enjoy.
