Cheese and Tomato Picnic Melts

Ingredients

Method

  • 75g plain flour
  • Large pinch of paprika
  • 20g butter, softened
  • 1 spring onion
  • 20g grated mature cheddar
  • 3 tbsp tomato juice or passata
  • Preheat the oven to 200C. Place the flour in a mixing bowl, and stir in the paprika and butter, along with some salt and pepper. Rub the butter into the flour.
  • Finely chop the spring onion, and add to the bowl. Mix in the grated cheese and add two tbsp of passata, then mix to create a smooth dough. You may need to add a little more passata if the dough isn’t pliable enough. Roll out the dough on a floured surface to 1 cm thick, then cut out 5 cm circles and place on a baking tray.
  • Bake in the oven for up to 15 minutes, and serve the biscuits as part of a delicious picnic spread with salads, charcuterie, and cheeses. Perfect!
