Cheesy Chicken Pasta Bake



  • 4 tbsp olive oil
  • 1 chopped onion
  • 2 crushed garlic cloves
  • Pinch of chilli flakes
  • 2 x 400g tins of chopped tomatoes
  • 6 tbsp mascarpone
  • 4 sliced chicken breast fillets
  • 300g penne pasta
  • 70g grated mature cheddar
  • 50g grated mozzarella
  • Chopped parsley
  • Gently fry the onion for 10 mins to soften, then stir in the chilli and garlic and cook for 1 minute more. Tip in the tomatoes, season and simmer for 20 mins to thicken. Add the mascarpone and mix well. Meanwhile, season the chicken strips and fry in 1 tbsp of oil for 7 mins to cook through.
  • Heat the oven to 220C. Cook the penne until al dente, then drain and toss with a splash of the olive oil. Tip the pasta into an oven dish, stir in the chicken and sauce, and top with the cheeses and some parsley. Bake for 20 mins until bubbling and golden.
