Ingredients
Method
- 125g mozzarella ball, torn into small pieces
- 50g grated cheddar
- 1 tbsp wholegrain mustard
- 4 chicken breasts, skin and bones removed
- 8 smoked American-style bacon rashers
- Preheat the oven to 200C. Mix together the mustard and cheeses, and cut a slit into the side of each chicken breast to stuff with the mixture.
- Wrap the stuffed breasts with a pair of bacon rashers - don’t do it too tightly, but tightly enough to hold it all together. Season liberally with salt and pepper, and roast for 20-25 mins. Serve with steamed greens or buttery mashed potatoes.
