Ingredients
Method
- 1 tbsp smoked paprika
- 1 red chilli, deseeded and chopped
- 2 tsp brown sugar
- 1 tbsp oil
- 1 tsp soy sauce
- 1 tbsp ketchup
- 1 lime, zest and juice
- 2 thyme sprigs
- 4 x 175g pork chops
- 1 bay leaf
- Place everything apart from the pork and bay leaves in a food processor and blitz to a rough paste. Slather all over the meat and stick in the fridge for 30 mins to marinate.
- Once your barbecue coals are white, top each pork chop with a bay leaf and grill for 10 mins on each side, or until the pork is cooked through. Serve with chips and brown rice, or whatever else you fancy.
