  • 1 tbsp oil
  • Knob of butter
  • 700g beef or lamb sausages, chopped
  • 300g chorizo, chopped
  • 2 sliced onions
  • 1 chopped garlic clove
  • 2 tbsp flour
  • 1 tbsp smoked paprika
  • 2 chopped red chillies
  • 1 red capsicum, chopped
  • 200ml beef stock
  • 175ml soured cream
  • 1 tbsp parsley, chopped
  • Rice, cooked to serve
  • Preheat the oven to 150C. Heat the oil and butter in a frying pan and fry the sausages and chorizo for 7 mins, or until browned. Remove and set aside. Chuck in the onions and garlic and fry for 4 mins, then stir in the flour and cook for 3 mins more. Add the paprika, chillies, capsicum, then pour in the stock, return the meat to the pan, and cook in the oven for 35 mins.
  • Remove the pan from the oven, skim off any excess fat from the surface, and stir in the cream and parsley. Serve with rice or crusty bread.
