Ingredients

Method

  • 2 slices bread (rye bread or sourdough are best)
  • Butter
  • 3 slices salt beef or pastrami
  • A few slices of slicedcheese (Swiss or Gruyere are best)
  • 2-3 tbsp sauerkraut
  • Salt and pepper
  • Dill pickles to serve
  • 1 tbsp mayo
  • 1 tbsp ketchup
  • Dash of worcestershire sauce
  • 1 tsp horseradish sauce
  • Dash of hot sauce
  • 1 tsp finely chopped shallot
  • 1⁄2 dill pickle, finely chopped
  • Pinch of paprika
  • Make the dressing by mixing together all the ingredients in a small bowl, and seasoning well.
  • Make the sandwich by buttering both slices, then put the beef on one slice, and top with the cheese and kraut. Spread the dressing on the other slice, and place it on top of the kraut. Heat a frying pan or sandwich toaster, and lightly toast the sandwich on both sides. Serve with dill pickles. Heaven!
