Coconut Crumb Oysters



  • 6 oysters, removed from shells
  • 2 tbsp flour
  • 1 egg, beaten
  • 2 tbsp panko breadcrumbs
  • 2 tbsp desiccated coconut
  • Dash of olive oil
  • Knob of butter
  • Salad and spicy mayo to serve
  • Put the egg and flour in separate shallow bowls, and mix the breadcrumbs and coconut in a third bowl. Dip the oysters in the flour, then in the egg, and finally dredge in the breadcrumbs to coat. Fry in a pan of olive oil and butter for 3 mins on each side, or until golden and crisp. Drain on kitchen paper, then serve with salad and spicy mayo.
