Ingredients
Method
- 125g couscous
- Zest of 1 lemon, juice of half a lemon
- 1 tbsp olive oil
- ½ pack of dill, chopped
- Handful of mint leaves, chopped
- ½ cucumber, chopped
- 2 chopped peaches
- 125g peeled prawns
- Tip the couscous into a bowl, and cover with boiling water. Leave for about 5 mins, then fluff up with a fork and tip into a salad bowl. Stir in the lemon zest and juice, along with the oil, mint, dill, cucumber, and peach pieces. Toss through the prawns, and serve on plates - tasty! Top tip: replace the prawns with cashew nuts for a vegan version!
