Ingredients
Method
- 1 red onion, sliced into rings
- Juice of 2 limes
- Pinch of sugar
- 170g can of white crabmeat, drained
- 2 spring onions, sliced
- 1 chilli, sliced
- 1 avocado, chopped
- 1 crushed garlic clove
- 2 soft tortillas
- Handful of mixed salad leaves
- Chuck the onion rings into a bowl, cover with half the lime juice and a pinch of sugar and salt, and then leave to soften while you do the rest.
- Mix the crabmeat, spring onions, and about half a sliced red chilli. Season well with pepper, and set aside. Mash up the avocado with the rest of the lime juice, as well as some salt, pepper, and garlic. Stir in the remaining chilli.
- Fold each tortilla in half and stick in the toaster for about 1 minute. Put the slightly toasted tortillas on two plates, and top with leaves, mashed avocado, crabmeat, and drained pickled onion. Serve with a lime wedge, and enjoy.
