Creamy Smoked Salmon Linguine



  • 1 tbsp olive oil
  • 2 sliced garlic cloves
  • 2 grated zucchini
  • Pinch of chilli flakes
  • 200g linguine
  • 2 tbsp crème fraîche
  • 100g chopped smoked salmon
  • 50g rocket leaves
  • ½ lemon, juice and zest only
  • Heat the olive oil in a frying pan and fry the garlic for 2 mins. Add the chilli and zucchinis, cook for 4 mins to soften, then season well. Meanwhile, cook the linguine in boiling salted water until al dente, then drain and transfer the pasta to the frying pan with 100ml of the cooking water. Stir well.
  • Gently mix in the crème fraîche, lemon juice and zest and the rocket leaves, then mix in the smoked salmon pieces. Season again to taste, then serve immediately.
