Delicately-Spiced Nordic Meatballs



  • 8 cardamom pods, based
  • 2 tsp coriander seeds
  • 4 cloves of garlic, crushed
  • 300g beef mince
  • 200g pork mince
  • ½ tsp turmeric
  • Pinch of chilli powder
  • 1 egg, beaten
  • 115g cream cheese
  • 2 tbsp flaked almonds, to serve
  • Crispy shallots, to serve
  • Herb salad, to serve
  • Grind the cardamom seeds in a pestle and mortar with the coriander seeds. Mix the minces together and add the ground spices, chilli, garlic, some seasoning and the turmeric, then mix thoroughly with your hands. Beat in the egg, then form 12 meatballs from the mixture with damp hands.
  • Gently flatten the balls into circles, then place a tsp of cream cheese in the centre of each before closing the meat up around it, forming it into a ball again. Fry in a dash of oil for 10 mins, until browned all over and cooked through. Serve with a scattering of almonds, some crispy shallots and a herb salad.
