Easy Cheesy Chops



  • 1 kg sliced potatoes
  • 1 onion, finely sliced
  • Splash of chicken stock
  • 2 tbsp olive oil
  • 4 pork chops, approx 175g each
  • 100g grated mature cheddar
  • 1 tbsp wholegrain mustard
  • 3 tbsp milk
  • Buttered kale, to serve
  • Preheat the oven to 230C. Toss the potatoes, stock, onion and oil together in a bowl and season well. Tip the lot into a sauté pan and bake for 30 mins - you want the potatoes nicely browned and crisp. Lay the pork chops on top of the potatoes, and cook for another 10 mins.
  • While the potatoes are baking, mix together the mustard, cheese and milk with some black pepper. Once the chops have cooked for 10 mins, spread this rarebit mixture all over them, and place the pan under the grill for 5 mins, or until the cheese is oozy and bubbling and the potatoes are crispy. Serve with kale or your choice of greens on the side.
