Easy Cheesy Mushrooms



  • 4 portobello mushrooms
  • 100g gorgonzola, crumbled
  • 25g walnuts, toasted and chopped
  • 4 thyme sprigs
  • knob of butter, chopped
  • rocket, to serve
  • Preheat the oven to 200C and arrange the mushrooms - cut-side up - on a baking tray. Scatter with the cheese, thyme, mushrooms and butter, then cook for 10 mins until gooey and softened. Serve with rocket leaves, and enjoy.
