Easy Salami Picnic Tarts

  • 500g ready-made puff pastry
  • 1 egg, beaten
  • 12 slices of your favourite salami sausage or similar
  • 2 tbsp homemade pesto (or shop-bought... we won’t judge!)
  • Get things started by preheating your oven to 200C. Roll out your puff pastry nice and thinly (it helps if you keep it well-chilled before you start).
  • Cut the pastry into rounds using a small plate or the rim of a glass as a template. Ideally, you want the rounds to be about 1-2cm wider than your salami slices, so the charcuterie can fit neatly into the middle. Brush the pastry rounds with plenty of beaten egg, then place your slice of salami onto each one.
  • Bake these yummy quick tarts for 10-12 minutes in the oven, or until the pastry has puffed up nicely and turned golden. Allow to cool on a wire rack, then top with a generous dollop of pesto.
