Feta and Watermelon Sunshine Salad

Ingredients

Method

  • 1 cucumber, chopped
  • 250g feta, cubed
  • 25 kalamata olives
  • Handful of rocket leaves
  • ½ watermelon, sliced into wedges
  • For the Dressing
  • 100ml white wine vinegar
  • 2.5 cm piece of ginger, grated
  • 2 tbsp chopped mint
  • 1 lime, juice only
  • 300ml olive oil
  • Salt and pepper
  • Pop the cucumber into a bowl with the other salad ingredients, except the watermelon. Gently mix to combine.
  • Make the dressing by mixing together the ingredients, and seasoning to taste. Pour over the salad, and mix to combine. Serve on a plate, with slices of watermelon on the side, and maybe some warm pitta.
