Fillet Steak in Wine and Mushroom Sauce

  • 2 x 220g beef fillet steaks
  • 3 tbsp olive oil
  • For the Sauce
  • 120g wild mushrooms, torn
  • 2 chopped shallots
  • 1 chopped garlic clove
  • 200ml red wine
  • 2 tsp chopped thyme
  • Rub the steaks with seasoning and oil, then fry in a very hot pan for 3-4 mins on each side or to your liking. Remove from the pan and leave on a board to rest.
  • Meanwhile, reduce the heat in the pan and add another splash of oil. Fry the shallots and garlic for 3 mins to soften, then stir in the mushrooms and fry for 3 mins more with some seasoning. Add the wine and thyme, and simmer for 5 mins or until the sauce has thickened. Serve drizzled over the steaks with a heap of chips on the side.
