Garlic Mushroom Bruschetta



  • 1 tbsp olive oil
  • 200g shiitake mushrooms, torn
  • 100g brown mushrooms, sliced
  • 100g portobello mushrooms, sliced
  • 1 chopped garlic clove
  • 1 tsp butter
  • 1 tbsp red wine vinegar
  • 4 slices of wholemeal sourdough
  • 1 garlic clove for rubbing
  • Heat 1 tbsp of oil in a pan and fry the mushrooms with the chopped garlic until browned. Add the butter, vinegar and seasoning, and cook for a few mins more.
  • Meanwhile, grill the bread and rub with the garlic clove. Top with the mushrooms, season with black pepper and serve with truffle mayo or pesto.
