Garlic Mushroom Frittata

  • A splash of olive oil
  • 250g chestnut mushrooms, sliced
  • 1 crushed garlic clove
  • 1 tbsp chopped chives
  • 4 big eggs, beaten
  • Salt and pepper
  • Add a little olive oil to a decent sized frying pan, and set over a moderate heat. Stir fry your mushrooms for a couple of minutes until softened and browned, then tip them into a sieve over a bowl (you don’t want soggy mushrooms for this dish).
  • Return the mushrooms to the pan along with the garlic and chives, and add a good pinch of black pepper and a twist of salt. Cook for another minute, then turn the heat right down to low. While cooking, be sure to preheat the grill to a high setting.
  • Add the beaten egg to the frying pan with the mushrooms. Cook for about five minutes, or until almost set. Stick the pan under the grill for another four minutes, until set and lightly browned, then serve hot with a fresh green salad.
