Garlic Prawn Linguine Recipe

What you'll need: * 300g linguine [http://www.pickyourpasta.com/project/about-linguine-pasta/] * 200g sugar snap peas or similar * 2 garlic cloves, finely chopped * 1 large red chilli, finely chopped * 24 king prawns [http://www.bbcgoodfood.com/glossary/prawn], peeled * 10 cherry tomatoes, halved * 2 tbsp olive oil * A handful

What you'll need:

  • 300g linguine
  • 200g sugar snap peas or similar
  • 2 garlic cloves, finely chopped
  • 1 large red chilli, finely chopped
  • 24 king prawns, peeled
  • 10 cherry tomatoes, halved
  • 2 tbsp olive oil
  • A handful or torn basil
  • Zest and juice of a lime

Method

First

Cook the pasta with the peas in salted boiling water until it is al dente, drain, and set aside.

Second

Heat the oil in a wok, and throw in the garlic and chilli. Cook over a low heat for about a minute - don’t let the garlic brown. Toss the prawns in, and cook for three minutes or so until they turn pink.

Third

Add the tomatoes and cook for another three minutes, or until they start to soften. Add the drained pasta and peas, and stir well, mixing everything together. Stir in the basil with the lime zest and juice, season with salt and pepper, and serve hot.
