Gently Spiced Kale Salad

Ingredients

Method

  • Small bunch of parsley, chopped
  • Small bunch of curly kale, chopped
  • 1 large tomato, finely chopped
  • 1 small green chilli, finely chopped
  • 6 shallots, finely chopped
  • Flesh of half a coconut, scraped and chopped
  • 1 tbsp dried fish flakes (optional)
  • 1⁄2 lime, juice only
  • Salt, to taste
  • Add the chopped leaves to a bowl, and add the tomato, chilli, and shallots. Mix well. Add the rest of the ingredients, and mix well with a spoon. Season to taste, and serve as a delicious side to your favourite Southeast Asian dishes.
