Gnocchi with Chorizo and Red Pepper

Ingredients

  • 4 tsp olive oil
  • 2 sliced red onions
  • 1.5 red peppers, sliced
  • 60g chorizo, chopped
  • 2 crushed garlic cloves
  • ½ tsp chilli flakes
  • 500g gnocchi
  • ½ lemon, juice only
  • 100g baby spinach leaves
  • 10g grated parmesan
  • 10g basil leaves
  • Heat 2 tsp of oil in a large pan and fry the onions, peppers and a pinch of salt for 10 mins with a splash of water. When softened, add the garlic, chilli flakes and chorizo, and fry for 3-4 mins.
  • Tip the gnocchi in the pan with 1 tsp of oil and cook for 10 mins, or until the gnocchi is golden and just starting to crisp. Meanwhile, whisk 1 tsp of oil with the lemon juice and some black pepper, and toss the dressing through the spinach. Serve the gnocchi in shallow bowls scattered with cheese, basil and with some spinach alongside.
