  • 4 tsp olive oil
  • 2 sliced red onions
  • 1.5 red peppers, sliced
  • 60g chorizo, chopped
  • 2 crushed garlic cloves
  • ½ tsp chilli flakes
  • 500g gnocchi

  • 10g grated parmesan
  • 10g basil leaves
  • Heat 2 tsp of oil in a large pan and fry the onions, peppers and a pinch of salt for 10 mins with a splash of water. When softened, add the garlic, chilli flakes and chorizo, and fry for 3-4 mins.
  • Tip the gnocchi in the pan with 1 tsp of oil and cook for 10 mins, or until the gnocchi is golden and just starting to crisp. Meanwhile, whisk 1 tsp of oil with the lemon juice and some black pepper, and toss the dressing through the spinach.
