  • 4 pre-made crepes
  • 300g spinach, blanched
  • Pinch of nutmeg
  • 1 tbsp pine nuts, toasted
  • 250g gorgonzola or other crumbly blue cheese
  • 50g butter
  • 50g parmesan
  • Preheat the grill. Lay the crepes out on a clean work surface, place a layer of spinach down the middle of each one, and add a sprinkle of nutmeg. Sprinkle on the pine nuts, then crumble the blue cheese down the middle, too. Fold each crepe up from the sides to cover the filling, and transfer to a baking sheet.
  • Add a piece of butter to each folded crepe, and sprinkle with parmesan. Grill for 2 mins, or until the topping is golden and bubbling. Serve immediately.
