Grain Salad with Lemon and Pomegranate

Ingredients

Method

  • 150g quinoa, rinsed
  • 150g bulgur wheat
  • 1 tbsp olive oil
  • 1 red onion, sliced
  • 200g sun-blushed tomatoes, halved
  • 2 tbsp each of chopped mint, parsley, and chives
  • 1 tbsp torn basil
  • 100g feta, broken
  • 50g pomegranate seeds
  • For the Dressing
  • 1 lemon, zest and juice only
  • 2 tbsp pomegranate molasses
  • 1 tsp sugar
  • 2 tbsp olive oil
  • Put the grains in a lidded saucepan, cover with 500ml of water, and bring to the boil. Simmer for 4 mins or according to pack instructions, then remove from the heat and leave for 20 mins to absorb the liquid. Tip into a bowl. Make the dressing by combining the ingredients in a bowl and setting aside.
  • Heat a tbsp of oil in a frying pan, and gently fry the onions until softened. Add to the bowl with the grains, then gently mix in the tomatoes and herbs. Season well, add the dressing, and mix. Gently fold in the feta and pomegranate seeds, and serve.
