Greek Salad Bruschetta



  • 2 tbsp olive oil
  • 1 lemon, juice only
  • 150 cherry tomatoes, halved
  • 1⁄2 shallot, finely sliced
  • 50g pitted olives
  • 50g feta, crumbled
  • Salt and pepper
  • For the Bruschetta
  • 6 slices of ciabatta
  • 2 tbsp olive oil
  • Salt and pepper
  • Make the salad by whisking together the olive oil and lemon juice in a bowl, then tossing in all the salad ingredients, and mixing gently to ensure it is all dressed.
  • Heat a griddle pan until smoking. Drizzle the bread slices with olive oil, and season well with salt and pepper. Grill for one minute on each side (extra points if you can get some nice char lines!), then spoon the salad mixture on top.
