Ingredients
Method
- 15g butter
- 2 sliced red onions
- 2 sliced rashers of bacon
- 4 x 180g salmon steaks
- 1 small cabbage, shredded
- For the Dressing
- 2 tbsp wholegrain mustard
- ½ lemon, juice only
- 1 tbsp white wine vinegar
- 1 tsp chopped parsley leaves
- Gently fry the onion in the butter for 5 mins to soften. Season and brush the salmon steaks with olive oil and fry for a few mins in a separate to seal. Turn and repeat on the other side, until cooked through to your liking.
- Meanwhile, add the cabbage and bacon to the pan with the onions, then cover with the lid and cook for 10 mins. Combine the dressing ingredients in a small bowl and mix well. Place the cabbage mixture in shallow bowls, top with the salmon and drizzle generously with the dressing to serve.
