Grilled Steak with Portobello Sauce
Grilled Steak with Portobello Sauce

Ingredients

Method

  • 100g sirloin steak
  • 1 tbsp olive oil
  • For the Sauce
  • 25g butter
  • 1 tbsp olive oil
  • 1⁄4 red onion, chopped
  • 1 chopped garlic clove
  • 1 portobello mushroom, sliced
  • 50ml red wine
  • 50ml beef stock
  • 1 tsp fresh parsley, chopped
  • Salt and pepper
  • Heat up a griddle pan until smoking, and rub the steak with oil. Season liberally, and chargrill for 3-4 minutes on each side, or to your liking. Remove and leave to rest for 3 minutes.
  • Make the sauce by melting the butter and oil in a frying pan. Add the garlic and onions and cook to soften. Add the mushrooms, and cook for a couple of minutes, then tip in the wine and beef stock and bring to a boil. Simmer until reduced and thickened, then add the parsley and stir. Serve the steak on a plate, with the sauce spooned all around.
