Grilled Steak with Wild Mushroom Topping
Grilled Steak with Wild Mushroom Topping

  • 1 tbsp olive oil
  • 2 quality sirloin steaks or similar
  • For the Mushrooms
  • 25g butter
  • 100g wild mushrooms, chopped
  • 1 chopped garlic clove
  • Small handful of mixed parsley, chives, and tarragon, chopped
  • 1 tbsp crème fraîche
  • 1 egg yolk
  • 25g grated parmesan
  • Make your topping by heating the butter in a frying pan, then tipping in mushrooms to fry until softened. Add the garlic, cook for a minute, then tip the mixture into a bowl and combine with the rest of the ingredients.
  • Heat your grill to high, and heat the oil in a frying pan until very hot. Sear the steaks for a minute on each side (for rare), then spread the topping over them and stick under the grill for 3-4 minutes, or until bubbling, golden, and cooked to your liking.
