Method

  • 500g new potatoes
  • 2 tbsp olive oil
  • 600g leftover ratatouille or roasted veg
  • 2 tbsp capers
  • 1 red chilli, chopped
  • 4 x 200g halibut steaks or similar
  • 1 lemon, sliced
  • Preheat the oven to 200C. Slice the potatoes and place in a bowl, then toss in the oil and season well. Arrange in a single layer in a baking dish, and bake for 20 mins.
  • Spoon the ratatouille or vegetables over the potatoes, sprinkle with chilli and capers, and pop the fish steaks on top with the lemon layered over the fish. Drizzle with some more oil, season, and bake for 15 mins. Serve with bread.
