Halloumi and Cauliflower Pilaf

  • 500g cauliflower florets
  • 150g baby spinach
  • 1 tbsp oil
  • 1 red onion, sliced
  • 125g halloumi, cubed
  • 1 crushed garlic clove
  • Thumb-sized piece of ginger, grated
  • 1 tsp ground turmeric
  • 1 tbsp curry powder
  • 500g cooked brown rice
  • 1 red chilli, sliced
  • Cook the cauliflower florets in salted boiling water for 5 minutes, adding the spinach for the final two mins. Drain, and set aside.
  • Heat the oil in a casserole dish and fry the onion for about 5 mins. Add the halloumi, cook for 5 mins more, then chuck in the curry powder, turmeric, garlic and ginger. Cook for another minute, then stir in the rice, spinach and cauliflower to warm everything through. Season well, and scatter with chilli before serving.
