Halloumi and Tomato Pasta

Method

  • 250g cherry tomatoes
  • 1 tbsp olive oil
  • 1 chopped red onion
  • 2 chopped garlic cloves
  • 250g halloumi, cut into 1cm cubes
  • 1 chopped red chilli
  • 400g can of cherry tomatoes
  • 1 tbsp chopped fresh oregano
  • Salt and pepper
  • 400g cooked penne
  • Gently fry the fresh cherry tomatoes for 5 mins in a frying pan, until nicely softened. Set aside, then chuck in the olive oil, red onion, chilli, and garlic and cook for 3 mins to soften.
  • Add the cheese, cook for 2 mins or until golden, then pour in the tinned tomatoes and simmer for 3 mins. Add the fresh tomatoes, the oregano, and plenty of seasoning, cook for a couple of minutes more, then stir into the cooked penne pasta. Delicious!
