  • 1 red onion, chopped into bite-sized pieces
  • 3 mixed bell peppers, chopped into bite-sized pieces
  • 1 eggplant, chopped into bite-sized pieces
  • 1 tbsp olive oil
  • 250 halloumi, sliced thickly
  • Handful of basil
  • Salt and pepper
  • Preheat the oven to 220C. Spread the veggies across a large baking tray, and toss in the oil and plenty of seasoning. Roast for a good 25 minutes, or until the vegetables are golden and tender.
  • Heat up the grill. Remove the tray from the oven, and toss all the veggies. Lay the halloumi slices on top, seasoning again with salt, pepper, and olive oil. Grill for 5 minutes or until the cheese is golden. Scatter with basil, and serve with crusty bread.
