Herb-Crusted Sole



  • 1 tsp olive oil
  • 520g sole or lemon sole fillets
  • 4 tbsp fresh breadcrumbs
  • Handful of parsley, finely chopped
  • 1 lemon, zest only
  • 1 tbsp grated cheddar or similar cheese
  • Preheat the oven to 190C. Rub the fish fillets with the oil, then rest skin-side down on a lined baking tray.
  • Mix the breadcrumbs, parsley, cheese and lemon zest in a small bowl, and sprinkle the mixture over the fish. Roast in the oven for 10 mins or until the topping is golden and the fish is cooked through, then serve with your choice or salad or green vegetables and new potatoes.
