Ingredients
Method
- 100g beef fillet
- 1 tbsp olive oil
- Salt and pepper
- 1 tbsp each chopped chervil and parsley
- 50g breadcrumbs
- 1 tbsp olive oil
- 1⁄2 lemon, zest and juice
- 75g tinned borlotti beans, drained
- Handful of parsley
- Salt and pepper
- Preheat the oven to 200C. Mix together the herbs and breadcrumbs in a bowl until well combined. Rub the beef with a little oil, season liberally, and then coat the beef with the breadcrumb mixture. Fry the beef in a little more oil for 3-4 minutes on each side, then transfer to the oven and cook for 5 minutes for medium-rare.
- Pop the oil and lemon juice and zest into a salad bowl, then add the beans and parsley, and plenty of season- ing. Mix well to combine, then serve the salad with the beef sliced on top. Delicious!
