  • 3 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 3 tbsp chicken stock
  • 600g pork ribs, cut into individual pieces
  • 2 tbsp cornflour
  • 1 tbsp sesame oil
  • 1 sliced garlic clove
  • 1 tbsp ginger, grated
  • 4 spring onions, chopped
  • 1 red capsicum, chopped
  • 1 smallish sweet potato, cut into chunks
  • 100g chopped snow peas
  • Mix the hoisin sauce, soy sauce, vinegar, and chicken stock in a bowl, and add the ribs. Leave to marinate for 30 mins or longer. Preheat the oven to 150C, drain the ribs, and toss in the cornflour. Heat up the sesame oil in a wok, add the dusted ribs, garlic, ginger, and spring onion, and fry until the meat is golden. Season well, and pour in the remaining marinade and 100ml of water.
  • Bring to a simmer, then tip into a casserole dish with the red capsicum and sweet potato. Cover with the lid, then cook in the oven for 50 mins. Stir in the snow peas, and cook for 10 mins more, then serve.
