Homemade Taramasalata



  • 100g stale white bread, crusts removed
  • 250g smoked cod’s roe or similar smoked roe
  • ½ chopped red onion
  • 1 chopped garlic clove
  • 1 lemon, juice only
  • 75ml olive oil
  • 75ml sunflower oil
  • Pita, toasted to serve
  • Soak the bread in a bowl of water, then squeeze out the excess liquid and tip the bread into a food processor. Scrape out the soft roe from the cod roes and discard any thick skin, and tip this into the food processor along with the garlic, onion, lemon juice and plenty of black pepper. Whizz to a paste.
  • With the motor running, drizzle in the olive oil then the sunflower oil until incorporated and thick. Serve in a bowl with toasted pita and crudites, if you fancy.
