Honey Mustard Chicken Pasta Salad



  • 300g penne
  • 3 tbsp mayo
  • 1 tsp runny honey
  • 1 big tsp of wholegrain mustard
  • 300g roast chicken, torn into pieces
  • 4 sliced spring onions
  • Small bunch of basil, torn
  • 4 tomatoes, cut into eighths
  • Cook the pasta in boiling salted water until al dente, then drain and leave to cool. Mix together the mustard, mayo and honey in a large bowl, loosen with a splash or two of water, then tip in the pasta, onions, chicken, basil and tomato, and season well. Gently mix, and serve as a main dish or a side at a picnic.
