Irish Rarebit



  • 150ml whole milk
  • 1.5 tbsp plain flour
  • 400g strong cheddar, grated
  • 160g breadcrumbs
  • 1 tsp English mustard
  • 120ml stout beer
  • 2 egg yolks
  • 4 spring onions, finely chopped
  • 6 slices toasted soda bread or other dark bread
  • Warm up the milk in a saucepan and whisk in the flour. Keep stirring and bring up to the boil, to allow the milk to thicken. Add the cheese, and stir until melted, then stir in the stout, the breadcrumbs, and the mustard. When combined, remove from the heat and tip into a bowl.
  • Once cooled, beat in the egg yolks and add the spring onions. Spread generously over the toast, season with plenty of pepper, and stick it under the grill until golden and bubbling.
