Jamon and Fava Beans Tapas



  • 120g podded fava beans
  • 55g finely sliced jamon Iberico or similar quality cured ham, torn
  • 1 chopped garlic clove
  • 1 tbsp olive oil
  • Splash of sherry vinegar
  • Salt and pepper
  • Cook the podded beans in a pan of salted boiling water for 3 mins, or until tender. Drain and refresh in cold water. Place in a bowl and mix with the ham pieces, chopped garlic, and a splash of olive oil and vinegar, then season to taste with salt and pepper. Serve as part of a tapas selection, or enjoy with crusty bread.
