Lamb, Spinach and Parmesan Salad

Ingredients

Method

  • ½ tbsp olive oil
  • 1 lamb chop
  • Salt and pepper
  • For the Salad
  • 100g spinach leaves, chopped
  • 1 tomato, chopped
  • 1 tbsp each of chopped basil, dill, chives and parsley
  • 55g grated parmesan
  • 1 tbsp olive oil
  • Squeeze of lemon
  • Rub the lamb with oil and season well, the griddle for 4 mins on each side or to your liking. Remove from the pan, allow to rest for 5 mins, then slice.
  • Place the spinach, tomato, and herbs in a salad bowl and sprinkle with parmesan. Whisk the oil and lemon in a small bowl, then drizzle all over the salad. Place on a plate, and top with sliced lamb, Simple, yet perfect!
