Mackerel and Potato Bake



  • 700g potatoes, cubed
  • 1 small onion, sliced
  • 25g butter
  • 200g smoked mackerel fillets
  • 2 tbsp dill, chopped
  • 150ml double cream
  • 100ml fish stock
  • 2 tbsp horseradish sauce
  • Preheat the oven to 200C and cook the potato and onion in salted boiling water for 7 mins, then drain well.
  • Grease a 20cm baking dish with some butter, and arrange the potatoes along the base. Break up the fish into chunks, and tuck them around the potatoes..
  • Scatter with dill, mix together the cream, stock and horseradish, and pour all over the potatoes. Season well, dot with butter, and bake for 20 mins. Serve with salad.
